In the heart of the village, Julien Momon and his partner welcome you into a pared-down, wood-rich interior whose modern culinary score is founded on local, seasonal produce. To start, creamy aubergines paired with crunchy courgettes, fresh goat’s cheese from La Grave, basil pesto and red pepper sorbet, followed by 12-hour confit of pork belly in rosemary with velvety mashed potato and iced vegetables. The food is fresh, fragrant, vibrant and polished in a culinary ode to the cornucopia of country produce, courtesy of the virtuoso technique of a chef who boasts stints with Christophe Bacquié and Gérard Boyer. A slap-up meal with all the trimmings and offering excellent value for pleasure.

Acte 2
In the city of the famous arts festival, theatre is even part of the dining experience. Act I: a young couple of catering professionals set up shop in a magnificent edifice in the historic centre. Act II: a cheerful welcoming vibe and a cosy setting. Act III: a single set menu packed in fresh local, seasonal ingredients. The scene is set for the curtain to rise! Tuck into ravioles of cod brandade, celery and green apple sauce or breast of guinea fowl with parsnips and a gutsy gravy.

Agastache
The restaurant's name hints at a love of nature, as fostered by Frédérique, who grows flowers and aromatic herbs for her husband Frédéric, a chef who puts them to good use in his dishes. Their restaurant showcases well-constructed and fragrant modern cuisine with Mediterranean influences. The menu-carte is the product of local, often organic, ingredients, with vegetables taking pride of place. We enjoyed tucking into a starter starring delicately smoked fresh goat's cheese ravioli, courgettes and verbena broth for its crystal-clear freshness, then the meagre accompanied by a briny beurre blanc, chickpea and red pepper stew.

Alain Llorca

Alain Llorca, an emblematic figure of French Riviera cuisine, boasts a star-studded career that encompasses the mythical luxury Negresco Hotel and the Moulin de Mougins. In his farmhouse in La Colle-sur-Loup, whose terrace commands a jaw-dropping view of Saint Paul de Vence, this virtuoso chef celebrates the Mediterranean. The result is steeped in subtle, delicate, spot-on notes: fish from small boats, caponata and lightly seared green chard with a spicy sauce; roast veal with cream of tuna, burrata and sage ravioli; warm chocolate tart and citrus-laced sorbet.

Alivetu
This little "olive grove" (alivetu in Corsican) is a haven for foodies in the Saint Victor neighbourhood, abutting the Colline de la Garde. Diners can tuck into the chef's Mediterranean cuisine in the downstairs dining room with a polished concrete floor or on the mezzanine. Think braised endive, flame-seared oranges, roast squash and gorgonzola. The market-fresh lunchtime score is chalked up on a board; surprise menu in the evening.

Allegria !
In this luxury hamlet of maisonettes with guestrooms surrounded by olive and almond trees, tables are set out on the terrace in the shade of the plane trees, with the song of the cicadas in the background, and in the inviting dining room where it is nice and cool. Chef Julie Chaix, who has worked at Pic and Ducasse restaurants, prepares a lovely market-fresh menu inspired by the ingredients and traditions of Provence. Diners can indulge themselves with dishes such as pork terrine with bread toasted in meat juices and olive oil from Baux-de-Provence, pan-fried tuna with aubergine and a tomato reduction, and red berry panna cotta. The lunch menu is good value for money.

In his eatery near the Stade Vélodrome, this artist-cum-chef on a perpetual creative quest has elevated the small portion to the realm of art. He is a virtuoso when it comes to spices, roasting and smoking and his childhood in Congo flows freely through his cuisine. This distinctive hallmark is further enriched by a unique use of vinegars (over 400 house creations) that add depth and complexity to his jus. The resulting lineup of some forty small dishes, a truly herculean task, is surgically crafted and often visually striking: cuttlefish steamed in sake, puffed barley, briny seasoning and seaweed; watercress, smoked beetroot, langoustine milk, iced burnt langoustine heads. Each meal is a feat of culinary excellence, supervised by a diffident, yet single-minded chef, whose watchful eye never leaves the serving hatch.

Âma Terra
Diners are faced with a dilemma in the restaurant of this magnificent hotel. You can opt to dine in the inside space, with its Second Empire glass roof, crystal chandeliers and imposing china cabinet, or on the gorgeous terrace, with the gentle sound of water tinkling in the pools and fountains and the scent of typical Mediterranean fragrances hanging in the air. The Chef cooks up gourmet cuisine with Provençal overtones and a backdrop of original and striking associations.

Amarines by Mauro Colagreco
Part of a luxurious boutique hotel on the Cap d'Antibes peninsula, this creative fine dining establishment is helmed by renowned chef Mauro Colagreco. The restaurant occupies a charming pavilion set within the hotel gardens. Its dining room, which boasts a decor inspired by the sea and the natural world, opens onto a terrace planted with mulberry plane trees. Expect refined interpretations of Mediterranean cuisine: gamberoni prawn carpaccio with citrus and basil oil; wild-caught Mediterranean fish, sauce vierge with Taggiasca olives, preserved lemon, capers and fennel; floating island calisson-style, lavender-infused crème anglaise.

Apopino
Nestling in a chic neighbourhood, this bistro with a navy blue decor is home to a Piedmontese chef. He prepares market cuisine, Mediterranean – as you might expect, with Italian influences: fillet of bass accompanied by a crushed courgette trumpet and Taggiasca olives. The suggestions on the blackboard change according to the season and to the chef's inspiration. Everything is house-made, with the exception of the artisan bread, which comes from an excellent bakery.

Arnaud Donckele & Maxime Frédéric at Louis Vuitton

Located in the courtyard of a building that once housed the village doctors and is now the White 1921 Saint-Tropez hotel, this seasonal, open-air restaurant is further testament to the talent of the Arnaud Donckele/Maxime Frédéric duo, here in association with the luxury brand, the monogram of which is emblazoned on everything down to the desserts. The ingredients are chosen with the same rigour as at La Vague d'Or, and presented in delicate, generous dishes (red mullet, bottarga, vegetable rouille with orange wine) enhanced by the robust sauces and jus. The delicate desserts – such as peach and almond ice cream, flavoured with marigold – always exude the same freshness.

Atelier Salone
Atelier Salone, the bistronomy sibling of Villa Salone, is lavished with attention by Alexandre Lechêne, a chef with a stellar CV (Aux Lyonnais, Louis XV in Monaco) and formerly Michelin-starred in Saint-Véran (Hautes Alpes <i>département</i>). On the day of our visit, the menu included slow-cooked organic egg with pumpkin and truffles, a delicious vol-au-vent and a chestnut and blackcurrant mont blanc dessert with chestnut ice cream. The original style of this early-20C building is underscored by contemporary details.
